Polenta Beef Pie

I always try to make Polenta dishes over weekends, because none of the kids like it, but Roy and I totally love it.

Some stores sell ready-made Polenta, but I have never tried that - besides it is so quick to make!

Polenta, when set, can be cut into any shape and size, which you can then first place on a serving plate and then add whatever toppings you like, but can be served as soon as it has been cooked {more like a mash then}  I like it both ways.

Polenta Beef Pie

{6 servings}

4 cups Boiling Water
1 t Salt
1 cup Polenta

2 TB Olive Oil
1 Onion, chopped
2 t Garlic, crushed
1 - 2 Red Bell Peppers, chopped
1/2 cup Frozen Mixed Vegetables, defrosted
500g Lean Ground Beef {Mince}
Salt & Pepper, to taste
1 bottle {440g} Ready-made Tomato Pasta Sauce {whichever is your favorite}
1 cup Cheddar Cheese, grated

1.) Cook the Polenta in the Salted Boiling Water over medium to low heat until smooth {10 minutes}.
2.) Pour the Polenta into a 20 x 20cm baking dish and leave to set {1 - 2 hours}
3.) Heat the Oil in a large pan - saute the Onion, Garlic and Red Bell Peppers until just soft - add the defrosted Mixed Vegetables and cook another 5 - 8 minutes - remove from pan and keep aside.
4.) Cook the Ground Beef in the same pan until brown and loose - season to taste with Salt & Pepper - return the vegetables to the pan, add the Pasta Sauce and simmer for 5 - 8 minutes {to reduce the sauce a little}


5.) Spoon the meat mixture over the Polenta and sprinkle with the Cheddar Cheese.

3} Sprinkle with Cheese 

6.) Place under the roasting element until the cheese has melted and the dish is warm throughout.

Leave for 3 - 5 minutes, slice and serve with salads or vegetables.
