Lemon Custard Pie {no bake}


Custard is one of my favorite desserts, no matter how it is presented ... even on it's own, I love it.  This Lemon Pie is so creamy and just zesty enough for my taste buds.

I did not sweeten the whipped cream as the layer between the cream and the custard is very sweet/zesty.

Lemon Custard Pie

{8 - 12 servings}
{slightly adapted by me from the cookbook GESINSKOS}

1 packet (200g) Tennis Biscuits       {Graham Crackers is fine to use}
about 1/4 cup Milk 
2 cups thick Custard, store-bought or homemade
1/2 cup Lemon Juice  {I like it quite zesty so I add another 2 TB}
1 can (397g) Sweetened Condensed Milk
1 cup Fresh Cream   {whipping cream/double cream}

1.) Dip enough Tennis biscuits in the Milk to line the bottom of a 20 x 30cm pie dish - place a single layer snuggly against each other.
2.) Pour the Custard over the layer of biscuits.
3.) Crush the remaining Tennis biscuits {keep 2 aside for the topping} - sprinkle over the Custard layer.
4.) Beat together the Lemon Juice and the Condensed Milk until slightly thickened - pour over the Custard and Crumb layers.
5.) Beat the Fresh Cream until thick - spoon over the Lemon Condensed Milk and end off with the remaining biscuit crumbs - refrigerate 2 - 3 hours.



Serve on it's own.
