Family Favorite Rice Salad

I have been making this rice salad since even before we got married.  It is fruity, veggie packed and most definitely our favorite.  I have tried other recipes over the years, some even very similar, but have not found one as delicious as this salad.

This Rice Salad keeps very well in an airtight container in the refrigerator for up to 5 days, and actually gets better with time.  It is also perfect to take with on a camping trip.

I have added cooked, cold chicken to the salad before as well and that made an excellent lunch.

On a diet?  No problem - I had to lose a lot a bit of weight a few years ago {around 25kg = +/- 55lbs which I lost over a 4 month period} and this was one of my always-on-hand salads. Use Brown Rice instead of White, choose Peaches in natural juice - not in syrup, and opt for Mayonnaise "Lite". {The jam can also be substituted with a sugar free kind} 

Family Favorite Rice Salad

{8 - 12 portions}

3 cups cooked Rice
2 Green Bell Peppers, chopped
1 can (410g) Peaches, drained and chopped                 
2 Tomatoes, chopped  

2 TB Chutney
1/2 cup Mayonnaise
1 t Curry Powder
Black Pepper, to taste
1 Large Onion, finely chopped

1/2 cup Apricot Jam {smooth/fine}
1/4 cup Vinegar
1 t Ground Ginger
1/2 t Cayenne Pepper   {Red Pepper}

Fresh Parsley, chopped  {optional, to garnish}

1.) Combine the Rice, Green Bell Peppers, Peaches and Tomatoes in a large mixing bowl.
2.) Mix the Chutney, Mayonnaise, Curry Powder and Black Pepper - add the Onion and stir to combine - add this mixture in with the Rice etc.
3.) Heat the Jam, Vinegar, Ginger and Pepper - stir until smooth - remove from stove plate and let cool for 5 - 10 minutes - pour over salad and mix well.

Transfer to a serving bowl, sprinkle with Parsley {if using} and serve.
