Crispy, Gooey Trio Chocolate Cookies

These cookies have three different types of chocolates in them, and if you add the Cocoa, it is actually four.  Crispy on the outside and oh, so gooey, chewy on the inside!

You should know by now, I am not a big fan of baking cookies. Drop cookies, now, that is something else, I mean you mix, drop and bake ... what's not to like?

I have cut a few of them into heart shapes, just because I am in the Valentine Day mood, but I also wanted to see whether they cut well or not.  

Cut the cookies, using a cookie cutter, whilst still warm, but do not lift them until the first 10 minutes of cooling, otherwise they will break.

You can see the pieces of White Chocolate, the Milk Chocolate and the darker, gooey part, is the in between Dark Chocolate.

Crispy, Gooey Trio Chocolate Cookies

{makes about 30 cookies}

1 cup Self-Raising Flour
1/4 cup Good Quality Cocoa Powder
125g Plain Dark Chocolate, at least 70% Cocoa solids
100g White Chocolate, chopped
200g Plain Milk Chocolate, chopped
100g Butter {unsalted}, room temperature
3/4 cup Muscovado Sugar
2 Extra-Large Eggs
1 t Vanilla Extract

1.) Pre-heat the oven to 180 deg C (350 deg F) - line two baking sheets with baking paper.
2.) Sift the Flour and Cocoa Powder together in a small bowl, set aside.
3.) Melt the Dark Chocolate, and set aside to cool.
4.) Beat the Butter and Sugar until creamy - add the Eggs one by one whilst beating - add the Vanilla.
5.) Add the melted Dark Chocolate and beat until combined - stir in the White and Milk Chocolate pieces - fold in the Flour/Cocoa.
6.) Drop tablespoonfuls of the mixture onto the prepared baking sheets, leaving enough space between each drop {the cookies spread out quite a bit during baking}.
7.) Bake 10 minutes, remove from oven and let cool 10 minutes on the baking sheets {until the outside hardens slightly} Transfer, using a palette knife or similar, to a cooling rack until completely cooled.

Keep in a sealed container.
