Polenta Cake with Orange Syrup

Absolutely delicious!  I did not tell the kids this was made with Polenta... they do not like Polenta,,,sshhh, they loved the cake, so who am I, to burst their bubble!!

Strange how kids {well, not really kids anymore, but still..} are, the other day when I made my Beetroot, Sesame- & Poppy Seed Bread , Jacobus was enjoying a slice, until I told him it was made with Beetroot! He nearly gave himself whiplash as he looked down to the slice in his hand - he did finish it, though.

Polenta Cake with Orange Syrup

{makes a single layer cake: 8 - 10 servings}


1 1/3 cups Caster Sugar
3 Extra-Large Eggs
3 TB Butter, melted
2/3 cup Flour   {you can use Spelt Flour here}
2/3 cup Polenta
1/2 packet (50g) Ground Almonds
1/2 TB Baking Powder
1/3 cup Plain Yoghurt
1 t Fresh Rosemary, chopped finely


2 TB Honey
Grated Rind and Juice of 1 Orange
1/2 cup Caster Sugar
Almond Flakes, to decorate {optional}

1.) Pre-heat the oven to 180 deg C (350 deg F) - Line and spray a 25cm spring-form cake pan with Spray 'N Cook.
2.) Place all the ingredients for the Cake in a food processor - blitz until combined.
3.) Pour batter into the prepared cake pan - bake for 50 - 55 minutes.
4.) 10 Minutes before the Cake is done baking: Heat the Honey, Orange Juice & rind and Caster Sugar over medium heat until the Caster Sugar has dissolved.
5.) Pour the Orange Syrup over the hot Cake as soon as it comes out of the oven.

Let cool completely in pan before removing.  Decorate with Almond Flakes {if using}

Serve and enjoy!
