Meaty Open Grilled Cheese

Looks interesting, doesn't it ? It certainly is tasty and a little different than your everyday grilled cheese.

Two slices per adult with a side salad and you are set for a light dinner!  Or as is with fresh fruit to follow for a delightful breakfast.

I tried to cut it open to give you a glimpse of the filling - well, if the pic does not give you an idea, check out the ingredients .. ah, yes, that is why you are here in the first place, right.

So, let's get on to the recipe:

Meaty Open Grilled Cheese

{6 - 8 slices}

250g Bacon Bits
250g Ham {leftover or from the deli}, small cubes
1 large Onion, cut into thin rings
6 - 8 slices of Toasted Bread
1/4 cup Butter, melted
1/4 cup Flour
2 cups Milk
2 cups Cheddar, grated
Cayenne Pepper

1.) Pre-heat the oven to 200 deg C (400 deg F) - line two baking sheets with baking paper.
2.) Cook the Bacon Bits until crispy - remove from pan, mix with the Ham and keep aside.
3.) Using the same pan, saute the Onion until soft and brown - remove from heat.
4.) {use the microwave or stove to make the sauce} Mix the melted Butter with the Flour until a paste has formed - add the Milk bit-by-bit, mix and scrape the bottom and sides of your microwave dish or pan - microwave 4 - 5 minutes stirring every 30 seconds {if using a pot on the stove, stir continuously} until thick - add the Cheddar cheese {keep a 1/4 cup aside} stir until the cheese has melted.
5.) Place the toasted Bread on the baking sheets, divide the Bacon mixture into 6 - 8 portions and spoon onto the bread - add the Onion on top of the Bacon - pour the Cheese sauce over - sprinkle with Cayenne Pepper and the remaining 1/4 cup Cheddar.
6.) Bake until the sprinkled Cheddar has melted and the Cheese sauce has browned slightly.

Serve immediately.
