Apple & Berry Open Pastries

Berries are all over now, Blueberries, Blackberries, Strawberries and Raspberries. If it is not in season where you live, no biggie, use canned, as these pastries are baked in the oven and the berries go soft anyway.

I chose Red Apples as they are sweeter than the yellow or green, but you can use whichever you prefer.

Apple & Berry Open Pastries

1 roll Frozen Puff Pastry, defrosted
1 - 2 Red Apples, peeled, cored and sliced
1/2 cup Blueberries {fresh if possible}
6 TB Runny Honey {a little hot water can be added if very thick}
6 t Brown Sugar
1 Egg, beaten

Fresh Blueberries, to decorate {optional}
Whipped Cream to serve

1.) Pre-heat oven as per the directions on your Puff Pastry packet - line a baking sheet with baking paper.
2.) Roll out the Pastry - cut length wise in half and each half into three pieces {6 pieces altogether}
3.) Using your hands, create a small edge all round each pastry piece - place the pieces on the lined baking sheet.
4.) Arrange the fruit on top {inside the edges} and drizzle each pastry with one tablespoon Honey followed by one teaspoon Brown Sugar.
5.) Brush the open edges of the pastries with the beaten Egg - bake as per the time stipulated on the Pastry packet or until golden and puffed.

Serve with Whipped Cream and extra Blueberries.
