Easy Savory Party Platter


This platter is ideal for those "bring a plate" office parties or for an informal get together with friends.  It is quick to make and can be re-heated or enjoyed cold as well.

We usually have something like this on a Rugby game day.  The picture above only shows about 2/3rds of what I actually made. 


Pesto & Cheese Slices (12 slices)

1/2 roll Frozen Puff Pastry, defrosted {use the other half to make the Pesto & Tomato}
2 - 3 TB Basil Pesto
6 Cheddar cheese slices {the ready-sliced type - bread slice size}
Cayenne Pepper, to taste
Paprika, to taste

1.) Pre-heat the oven to 200 deg C (400 deg F) - Line a baking sheet with baking paper
2.) Roll out the pastry (keep half aside for the Pesto & Tomato recipe) - spread the Pesto over the pastry and place the Cheddar slices on top - using the cheese slices as guides, cut straight through the pastry, you will have 6 squares now - cut each of these to form 12 triangles - Sprinkle with Cayenne Pepper and Paprika over the cheese.
3.) Place on the lined baking sheet and bake 10 - 15 minutes until puffed and done.

Paprika Scone Squares with Toppings (30 scone halves)

2 cups Flour
1 TB Baking Powder
1/2 t Salt
1 t Paprika
1/2 t Mustard Powder
100g Butter, softened
1 Egg
1/2 cup Milk

1.) Pre-heat the oven to 200 deg C (400 deg F) - Line a baking sheet with baking paper
2.) Sift together the Flour, Baking Powder, Salt, Paprika and Mustard Powder - add the Butter and mix until it resembles bread crumbs - Beat the Egg and Milk together and add just enough of this to the Flour mixture to form a dough which can be rolled out {Do not over-mix}
3.) Roll out into a rectangle, 2 centimeters thick - cut into 15 square pieces - bake 10 - 15 minutes until golden brown and done - transfer to a cooling rack.
4.) Slice or break each scone in half and add the following toppings.
 
TUNA TOPPING:

1 can (170g) Tuna, drained
1/4 cup Mayonnaise
2 TB Tomato Sauce
Salt & Freshly Ground Black Pepper

Mix together all the ingredients and use as topping.

EGG TOPPING:
 
3 Eggs, hard-boiled, cooled and mashed {I do not like it mashed to finely}
2 TB Mayonnaise
Salt & Freshly Ground Black Pepper

Mix together all the ingredients and use as topping.

Baked Cottage Cheese Rolls (24 small rolls)

8 slices of FRESH White bread, crust removed
250g Cottage Cheese - use your favorite flavor {I used Chive Chunky Cottage Cheese}
2 - 3 TB Butter, melted

1.) Pre-heat the oven to 180 deg C (350 deg F) - line a baking sheet with baking paper
2.) Roll each slice of bread as thin as possible without risk of breaking it - add a table spoon full or two to the center of each slice - roll up and place on the baking sheet with the "open" side facing down - cut each roll into 3 smaller rolls
3.) Brush each small roll with melted butter and bake 15 minutes until golden brown and crispy.

Pesto & Tomato Puff Pastry (6 medium or 12 small squares)

1/2 roll Frozen Puff Pastry, defrosted
3 - 4 TB Basil Pesto
1 Large Tomato, cut into thick slices
1 t Sugar
3 TB Spring Onions, chopped
Morrocan Spices, to taste
1/2 cup Cheddar cheese, grated
1 Egg, beaten

1.) Pre-heat oven to 220 deg C (450 deg F) - Line a baking sheet with baking paper
2.) Roll out the Puff Pastry, cut a 1 centimeter border all round, brush a little water on the edges and place the cut-off pieces on top to form the border.
3.) Place the pastry on the lined baking sheet - spread the Pesto all over the inside - arrange the Tomatoes on top and sprinkle over the Sugar - add the Spring Onions and sprinkle Morrocan spice over.  Top with grated Cheddar cheese.
4.) Brush the border (all edges of the pastry) with the beaten Egg - bake 15 minutes until done and the pastry has puffed nicely.


I have made the Pesto & Tomato Pastry before but I doubled the quantities and we had that as an appetizer.  The Paprika Scone mixture can really be used for any of your favorite savory toppings {delicious with only a dab of butter as well !}
