Coffee & White Choc Cookie Stack

Do not let the size of this cookie stack throw you off! It is more than enough - Rich, creamy....... and the White choc is White Chocolate MOUSSE.

This is a perfect end to dinner, whatever the season. I do not think it is all that good for the figure though, but we all need to just enjoy a deliciously, rich dessert every now and then!

It is an easy and quick recipe to make and if you leave out the Brandy, the kids and mommy's to be, can also enjoy this.

Coffee & White Choc Cookie Stack

18 Shortbread Cookies { I used Eet-Sum-Mores }
1/2 cup Strong Black Coffee
1 TB Brandy  {optional}
1 t Vanilla Essence
250g Mascarpone Cheese
1/4 cup Milk
1 (150g) packet Instant White Chocolate Mousse   { I used MOIRS }
Cocoa Powder - for dusting
Chocolate Chips, for decorating {optional} 

1.) Mix the Coffee, Brandy(if using) and the Vanilla together - Dip each Shortbread Cookie quickly in the Coffee - do not over-soak.
2.) Beat the Mascarpone Cheese, Milk and White Chocolate Mousse until smooth.
3.) Start stacking - place a Cookie on a serving plate, spoon a little of the White Mousse over, sprinkle with cocoa, another cookie over the White Mousse, sprinkle with cocoa - repeat once more.
4.) End with a couple of Chocolate Chips on top.

Serve immediately!
