Butter Cinnamon Chocolate Chip Pecan Loaf

Wow!  What a mouthful for a recipe name ... but I could not leave out ONE word in this name.  Every ingredient makes a statement here!

Do you know that song " .. Heaven is a place on earth.." ? One of my favorites!  Well, I think that particular song was written for this delicious and oh, so buttery chocolatey....and on and on ...

When I removed the loaf from the oven, (and after cooling a bit in the loaf pan), I almost shouted out with delight - see the next photo of the underside (when I remove a cake or loaf from the pan I put a wire rack over the top and flip it)

Note the addition of the Cinnamon flavored Butter in this recipe!

Butter Cinnamon Chocolate Chip Pecan Loaf

2 cups + 2 TB Cake Flour
2 t Baking Powder
1/2 t Bicarbonate of Soda
1 TB Ground Cinnamon, { divided }
Pinch of Salt
1 cup Buttermilk
1/2 cup Golden Syrup or Honey
1/2 cup Brown Sugar
2 Extra-Large Eggs
1/4 cup Butter, melted
2 t Vanilla Essence
1/4 cup Cold Butter, cut into small cubes
1/2 cup Chocolate Chips
1/2 cup Pecan Nuts, chopped

1.) Pre-heat oven to 180 deg C (350 deg F) - Spray a 15 x 23cm loaf pan with Spray 'N Cook and line the bottom with baking paper.
2.) Sift together the Cake Flour, Baking Powder, Bicarbonate of Soda, 1/2 TB Ground Cinnamon and the Salt in a large mixing bowl.
3.) Whisk the Buttermilk, Syrup or Honey, Brown Sugar, Eggs, melted Butter and Vanilla together in a medium bowl - Fold this mixture in with the Flour mixture until just mixed.
4.) Mix the Cold Butter and the remaining 1/2 TB Ground Cinnamon - add this in pieces, together with the Chocolate Chips and Pecan Nuts to the batter. Stir gently to mix.
5.) Pour the batter into the prepared loaf pan and bake 45 - 55 minutes or until a tester comes out clean.
6.) Remove from the oven - let cool 15 minutes in the pan and transfer to a wire rack.

Serve slightly warm or cold - delicious both ways!
