Light Lemon Syllabub


I noticed two things today 1.) I haven't posted one sweet/dessert recipe this week {very, very unlike me}   2.) It's been a long time since I last posted something for the weight watchers like me or at least something a little healthier than what I usually dish up!

Our kitchen, by now known as the war zone, is a mess - everything all over the house.. I can not believe I have so many gadgets, all kinds of cookers, bits and pieces and heaven only knows what else.

To top it all, everything is full of dust - throughout the house! At least once the kitchen is done, we can clean and hopefully, have more storage space. 

Just making this simple {but delicious} dessert tonight tested my patience - I felt totally out of place, the cabinet with stuff like the Honey is temporarily in the dining room, the refrigerator is now on the opposite side as before... I even had to search for my electric hand mixer. 

But, I am sure, all this will be worth it - well, it better be!

Even though it is a lightish dessert, it is quite rich, I'd advise to rather serve in small glasses.

Well, here we go:

Light Lemon Syllabub

2 TB Honey
3 TB Lemon Juice
1 TB Grated Lemon Rind
2 TB Brandy
175g (6 oz) Low-Fat Cream Cheese, plain and smooth, softened
1/3 cup Fresh Cream, whipped
Toasted Almond Flakes, to decorate

1.) In a medium size bowl, beat the Honey, Lemon Juice, Lemon Rind, Brandy and Cream Cheese until smooth.
2.) Fold in the whipped Cream - chill for at least an hour before serving.

Just before serving, decorate with Toasted Almond Flakes.
