Coconut Curry Beef & Vegs

Coconut Curry Beef and Vegetables ~ Curry is comfort food at it's best and you can make double - freeze half for next time ! #CurryDish #ComfortFood

It is awfully cold today and I really can not stand being wrapped up in layers of clothes, I always feel restricted, even when only wearing a jersey extra. Inside is okay, but hanging the laundry !! Feels like the wind cuts right through my skin. Yes, I have a dryer {of course} but I prefer hanging the laundry out in the open air.

I made this Curry dish a few weeks ago {another Pinterest pin I forgot to post about}, and there was some leftovers which I froze in a ziplock bag - sooo, I only need to re-heat the Curry and cook some Basmati rice. Very quick, when making rice in an actual Rice Cooker - do you use a Rice Cooker because I'll be totally lost without mine (and I think after eating burnt rice for years, Roy is really glad I bought the Cooker a couple of years ago)

This dish got 5 stars from both of us!

Coconut Curry Beef & Vegs

Original Recipe pinned from And Love It Too (slightly adapted by me) 

1 kg Sweet Potatoes, peeled & cubed into smaller pieces
1.2 kg Beef cubes (I used Rump Beef)
1/3 cup Curry Powder (I only use medium spiced)
4 TB Cornstarch
1 TB Salt
1/2 t Cayenne Pepper
1 Large Green Bell Pepper, ribs removed and cut into strips
2 Large Red Bell Peppers, ribs removed and cut into strips
1 Large Onion, diced
5 Large Carrots, peeled and cut into rings
2 Cans Whole Fat Coconut Milk
Parsley to garnish
Sliced Bananas /Shredded Coconut /Chutney to serve

1.) Use a large slow-cooker - I used my 6 liter capacity - Place the Sweet Potato and Beef cubes at the bottom of the cooker.
2.) Mix the Curry powder, Cornstarch, Salt and Cayenne Pepper in a small bowl. Sprinkle the spice mixture over the Sweet Potato & Beef cubes, mix with a large spoon to coat all evenly.
3.) Place the Green- and Red Peppers, Onion and Carrots in a large bowl and just mix it all up.
4.) Add the Vegetables on top of the Meat in the cooker - DO NOT stir, just layer evenly.
5.) Pour both cans of Coconut Milk over the vegetables and cook on LOW for 8 hours or on HIGH for 4 hours.

Serve with Basmati rice, garnish with Parsley. (Sliced Bananas, Shredded Coconut, Chutney are good to serve with a curry)

After this (especially because I know it is so gooood), I am starving (and cold)... so ... I'm off to the kitchen for some re-heating and cooking rice.

    1. We just re-heated and finished the leftovers which I had frozen, and it tasted as if was just made from scratch so I can add that it freezes very well!
