Cheesecake is one of our favorite desserts, any which way you can think of serving them and I have never had a flavor I did not like.

These Cheesecake Bites Covered in Chocolate are fun to make and of course even more fun to eat.

I have been so busy exploring other recipes and making up my own, that I totally forgot just how delicious these little bites are.

An old-fashioned type baked cheesecake will always be the number one, but these little chocolate covered cheesecake bites are so perfect to add to a sweet party platter.

Or serve as an addition to a kids’ party ! When my kids were little, I remember they could never finish a slice of cheesecake. Not even when I sliced smaller pieces for them.

And let me tell you – my kids have always been huge cheesecake fans ! Their favorite, or really most people who have tasted my cheesecake love this recipe as well as my Light Lemon Cheesecake Bars.

I do bake the latter more often though. No particular reason, besides maybe that I usually do not have sour cream in the refrigerator, which is an absolute must for this recipe.

You can of of course also cover any cheesecake in chocolate. As long as the cheesecake is very cold, the chocolate will stick perfectly.

What to use to dip Cheesecake bites in Chocolate ?

In the recipe below I mention using a spoon to dip, but a strong kebab stick works like a bomb as well. I use the smaller sized kebab stick when dipping this way. (around 10cm – 4 inches long).

Ingredients
  

  • 1 cup Tennis Biscuits finely crumbled (or Graham Crackers)
  • ¼ cup Unsalted Butter melted
  • 500 g Cream Cheese plain, softened ( 16 oz )
  • ½ cup Sugar
  • ¼ cup Sour Cream
  • 1 t Vanilla Essence
  • 2 extra-large Eggs
  • 750 g Semi-Sweet Chocolate chopped ( 24 oz )

Instructions
 

  • Pre-heat oven to 160 deg C (325 deg F) – Line a 20 x 20cm (8 inch) oven dish with baking paper. Cut the paper large enough to form an overhang (easier to remove later)
  • Mix the Tennis biscuit crumbs and the Melted Butter. Press onto the bottom of the prepared oven dish
  • Beat the Cream Cheese until smooth in a large mixing bowl. Add the Sugar, Sour Cream, Vanilla and Eggs – beat until very smooth. Pour filling into crust
  • Bake 45 – 60 minutes until the edges are set. The center will be soft but will set whilst cooling
  • Remove from oven and cool approximately 30 minutes before transferring it to the refrigerator, cool until fully chilled, about 2 hours
  • Remove Cheesecake from paper and cut into bite-sized pieces (I get 36 pieces)
  • Melt the Semi-sweet Chocolate until smooth (Do this in three batches-as needed). Cool for a minute or two
  • Using a dessert spoon dip and gently roll each piece of Cheesecake in the melted Chocolate till it’s covered on all sides
  • Place dipped pieces on a sheet of wax-paper and chill until set - 5 - 10 minutes
